Chilled or Frozen Cheese: What an Importer Should Confirm
Cosmo Food EU EditorialChoosing chilled or frozen cheese starts with how the customer will use it and how the product will reach that customer. A fresh retail pack, a foodservice ingredient and an IQF format can answer different needs. Compare the actual products and handling instructions rather than treating one storage route as suitable for every cheese.
Define the application before comparing formats
Tell the manufacturer whether the cheese is for direct retail sale, a restaurant kitchen, pizza preparation or further manufacturing. Describe the expected portion, appearance, texture and performance. For a cooking application, ask how samples should be evaluated under the intended process, including preparation and service conditions.
Our La Bottega Cheese range is a starting point for discussing fresh cheese, selected IQF formats and hard-cheese formats. Availability and the specification are confirmed for the selected SKU.
Questions to settle with the manufacturer and importer
| Decision | For a chilled proposal | For a frozen proposal |
|---|---|---|
| Handling | Obtain the specified storage and transport conditions for the exact product. | Obtain the frozen storage, transport and handling conditions, including any permitted preparation route. |
| Shelf life | Confirm the total shelf life and agreed remaining life at the delivery point. | Confirm the frozen shelf life and any separate instructions and limits after thawing or opening. |
| Use | Test the sample in the intended retail, kitchen or manufacturing application. | Ask whether the product is used from frozen or needs a defined thawing process, then trial it accordingly. |
| Pack | Check net quantity, units per case, protection and handling after opening. | Check the freezing format, portioning, pack protection and case configuration. |
| Delivery | Agree the route, cold-chain responsibilities and acceptance criteria. | Agree the frozen distribution route, responsibilities and acceptance criteria. |
Do not transfer a temperature, shelf-life value or thawing instruction from a similar cheese. Ask for the current specification and supporting instructions for the exact SKU and production site.
Test under the intended conditions
Record the sample reference, storage history, preparation method and assessment criteria. For an ingredient, review the characteristics that matter to your process, such as portioning, moisture behaviour, texture or cooking performance. A sample approval should identify the tested product and agreed reference rather than a category name alone.
If the pack, recipe, production site or preparation method changes, ask which approvals and documents need to be reviewed. Compare quotations only after the product, pack and delivery basis are clear.
Keep destination review product-specific
Identify the destination country, local importer and intended sales channel early. Share the importer's written requirements and any label, language, ingredient or certification questions with the selected manufacturer. Your importer and qualified advisers confirm the applicable import route and final label. A general category description or supplier certificate does not establish the position of every cheese SKU in every market.
For broader preparation, read the private-label buyer's guide. For a cheese enquiry, send the application, destination, pack, indicative volume and delivery timing, together with the specification or reference product you already have.
